Imli tamatar ki chat

Tamarind and tomato's spicy salad
**************************
Tomato 500gm
Chopped mint leaves 20 leaves
Chopped coriander leaves 50gm
Chopped red onion 100gm
Chopped green chilli 30gm
Crushed roasted peanuts 80gm
........
Dressing
Tamarind pulp 80ml
Lemon juice 1lemon
Black salt 1/2tsp
Kashmiri chilli powder 1tsp
Mustard oil 50ml
Sugar 50gm
...................................
Cut tomatoes wedges nicely and mix with chopped items and crushed peanut

Mix with the tamarind dressing.
Serve cold

Ccccccccccccccc.... Spicy but mmmmmmmmmmhhhhhhhhhh....

Amchoori bhindi
Sour lady fingers with mango

Lady finger 500gm
Ginger garlic paste 40gm
Black salt 1/2 tea spoon

Mustard oil 30ml
Fennel powder 20gm
Fine chopped green chilli 40gm
Mango powder 60gm
Coriander powder 40gm
Crushed red chilli 20gm

For dusting
Sooji (semolina flour) 60gms and Besan flour 60gms (mix together)

Ghee 100ml to Pan fry

Cut top and end part of lady fingers. Make a cut on center length wise. Marinate with ginger garlic paste, black salt and Keep aside.

Mix mango powder, coriander powder, fennel powder, crushed chilli, fine chopped green chilli and mustard oil.

Stuff the lady fingers with powder mixture
Dust and coat with sooji, besan mixture.

HEAT GHEE IN HEAVY BOTTOMED PAN and SHELLOW FRY on medium heat.
Make sure not too much ghee in the pan
TURN to UP SIDE DOWN
Cook untill well done, crispy and crunchy

Serve warm with plain beaten yoghurt.
